Opening the doors of this wonderful world of the
“not only but above all sweetness”
as I love defining it, and to which I affectionately belong,
means just
to take an arduous journey
through the soul of who guards jealously
the “magic key” of this world,
so
through the soul of who has devised and realize this little
angle of heaven,
or the so-defined by the pulpit
“the Dantesque circle of greedy men” ....
so, it’s mine, the honor but also the burden
to make you take an introspective and contemplative journey
into the world of the “Great Master”,
as well as, the choice to underline,
more than the intricate beginning,
the goal already caught up of its personal run,
without to omit to confide you some
secret recipes or a little infallible ingredient,
also as regards the life,
and,
goodness knows,
my dear friend, if, through the music
I have not found yet the sweetest way
in order to open his heart and to realize our purpose.
It’s an opinable consideration
that every great master
has got an inspiration source
which is able
to guide the master
towards charming creations.
After this premise.
I would assert that the music,
is the inspirer muse of our brilliant and unequalled master.
But also other values such as friendship,
courage, determination and passion
but above all love and respect.
So be more benevolent in criticism, therefore,
if entering in our atelier of the sweetness,
than for example in Mozart
or in Beethoven’s one,
you will find a more simply music
but surely not less sweeping:
from the great interpretation of and Celentano
to the involving singer Massimo Ranieri
or Gino Paoli that, interpreting the great song
“averti addosso…”,
(That is our “maitre” favourite song),
remembers us that, without to be able to love, or to be able to give
or also without to be able to say what we feel,
we are like just “empty pocket”.
A true music,
Able to tell us not only
how this circle of greedy men has became
but above all able to tell us about its origin as the dream of a men,
that, since when was a child,
has dreamed to learn all about this work
so, we went against the wish of his parents
and he began to support the most important confectioners
without to perceive any money
and so, to steal all the secrets of their work.
So, our master is a self- taught man,
who, was able to transform his dream into the reality
and his work into his art
just with his sense of sacrifice, sense of duty,
and a lot of will and perspicacity.
The charge, the energy, the originality
that he puts on hands of this pastry shop
are very astonishing:
Every day a new and brilliant idea,
but also the fear and the intolerance to see,
even if sporadically,
“An empty shop”.
He is always in front line, near to us,
in order to encourage us
to act always for the best, also in our life.
A constant work, a total devotion for its “world”:
A world to which he dedicates all himself
in order to maintain alive his soul.
In his work the master is supported by people defined by himself
“my arms”:
The manager Marco Serra,
the public relations and external services manager: Deborah Gatti
and the responsible of the workroom: Ester Bellomo.
Sometimes I amuse myself to make a fool of them
calling them:
“the three musketeers”
Naturally it is just a compliment
to underline their collaboration, their unity
even if this unity, surely, on the other hand,
does not hide some constructive
quarrels and discordances of opinions.
I would conclude
the description of the first leg of my journey
with the beautiful pictures
of this world that , in every way, is not free
from engagements neither from dark moments.
Dash! I was forgetting
the most important secret…
It is the love!
Love in all its forms:
Love for our work, for our family
for our boyfriend or girlfriend,
love for ourselves, so: the love for life…
Closely connected to the love, than there is the
Second secret:
The innate gift,
the gift to transfer our emotions and our feelings
in every product of our work,
a gift able to confer to a simple pastry,
the power to present indescribable and sublime feelings!
A concentration of emotions conveyed
by who creates to the created thing
and from the created thing to the addressee who
is so lucky to enjoy the result of this creation,
then, from the addressee to the creator
according to a “beneficial vicious circle”.

Surely the “see you soon Himma” arrived
before than we have thought,
your perpetual soul,
who could not avoid to talk about the “three musketeers”
who I have mentioned in the last pages.
Above all, let’s question my spirit of observation
about our “Deborah Gatti’s” enigmatical charm,
that is, the first point of reference in our pastry shop…
you have to imagine me, my dear friend, as the subordinated to Mrs. Gatti:
an unforesseable woman under the sign of the
“fishes”.!
Poor me!!
I was just joking,
in reality, beyond this ironical parenthesis,
my approach to this world
is just merit of her precious ability
to be a good example and to transmit unconsciously
her own competences without any presumption…
she is a doubtful woman,
but on the other hand she tries always to improve herself
she is projected toward a concrete professional development …
since her first employment, her sense of responsibility,
her attention for details and for her tasks,
and her intuition,
have caught the attention of the “great master” .
Sometimes our talents discoverer
amuses himself to remember us our beginning talk:
it is just like watching the try-out of a vip!!
We laugh and she hides her face in her hand
but it is better to talk about,
with feminine pride,
the elegance, the refinement, the ability
and the confidence that he won with the time,
virtues that today characterize her but always in the
respect of her role in the past:
she is able to conciliate her role of mother with her career.
For this reason I would dedicate this praise to “Mrs. Gatti”
just to her little sons:
Giulia and Emanuele,
And so, we pass to talk about the other woman of our team:
Ester Bellomo
whose beauty and inner force,
believe me,
are the envy of every woman on career !
I have to admit that I feel a deep sympathy for her,
surely, because we belong to the same family
and so we have a reason in more to feel unique;
it is just like to be born in another world
and to have another perspective
of life than this generation…
great desires and dreams
related to a great emblematic and infallible virtue:
“the patience”
But..as regards her story in our pastry shop..??
It is just a fairy-tail in fact she is called
Bastianello’s “Cinderella 80”…
“ in a huge and lucky day…
When Cinderella 80 was working in her workroom,
It arrived, unexpected,
the invitation of our beloved master
to leave her work and to follow him into his sweet world ….
She was doubting but she did not have absolutely any hesitation
so, she left her broom and her small shovel
and she began this adventure with enthusiasm and dedication
and, following the suggestions and the instructions of our master
with absolute diligence and interest
she was able in few time “to mould” the best ice-cream of Milan…
I am not joking….it is a poetry!!
She was very slow in her work
but only because she wanted to make the best,
so she was very scrupulous
but at the end of the working day
she had always a lot of problems with the personnel manager
and with her colleagues in general because of her slowness.
Her favourite saying is:
“aiutati che Dio ti aiuta”.
The positive answer to all the tenacity of this saying is Marco Serra,
he arrived like a storm, with the strength of a bull,
for this reason he was nominated as manager of our pastry shop
and he has been giving all him complete devotion to us….
From that moment, thanks to her professionality,
Ester was named as the “manager of the workroom”
That is a role that she would have never imagined to cover
so, she has the task to check every product ,
to control every possibility to vary the ingredients of the original recipes
but from Ester’s fairy-tail in which surely,(like in every fairy-tail)
there are monsters and magicians and witches ,
we have to come back to the reality
and to talk about Mr. Serra
who loves defining himself: the bull of the atelier of the sweetness.
He is very optimistic and full of enthusiasm,
And he is characterized by a great balance, even in the most delicate situations.
Here you are the personification of the self-esteem,
the materialization of the egocentrism
And the true essence of the vanity.
“my dear director…..a little of self-irony!!
Sometimes, maybe, it is better to be less serious.”
He could be defined as an inconvenient antagonist by some people
but surely, a source of benefit by other people.
But in every way, I can give you an advice…
do not flight against who thinks that (like Mr. Serra) in a war,
the most important thing is not to participate but to win!
Mr. Serra is the only one that did not caught the immediate sympathy of our Master
because he was considered too irritable
and a fanatic of the precision.
But, with the time, he was able also to demonstrate his other qualities:
Determination and ambition.
Besides, he is in step with the technology
(which surely is so far from the creativity of a great confectioner )
but he gave demonstration to be able to organize the entire work
of thirty crazy workers and to solve all the problems related to the cohabitation or the private ones
that are so difficult to hide.
He has got a lot of patience and for this reason,
maybe, he is able to give an answer to every problem and to solve them
in fact, he thinks that if in our world there are the problems, surely, there will be also a solution for them.
Maybe he understood a divine trust
and from his madness he has built his great balance.
And with his attitudes and his spirit and his devotion for the work
he won the support and the sympathy of the great master.
This conquest is based on the mutual respect and loyalty
as regards the professional aspect,
And on a defined distinction of their roles
as regards the human one.
It is just thanks to this confidence,
and the harmony between the different parts of this big family,
(in fact the master and the director can be defined
as two parts of the same body,
so they function thanks to an enviable mutual understanding),
that is possible create a unite and solid concern.
So, the heart of the entire pastry shop is
in the force of the workroom directed by “Ester Bellomo” ,
in all the staff employed in the sale represented by our “Deborah Gatti”
thanks a lot to everybody:
to everyone who has had the patience to read the entire page
but also the everyone who has red only the first line.
Himma
